This is one of those moments where I wish we were standing in my kitchen together. We have just finished making these Zucchini Meatballs and are about to try them for the first time. You, of course, are a little leery about how they are going to taste, but I am impatiently waiting for you to give them a try. You take the first bite. I wait. Then you look at me.

Yup, I wish we were having that moment right now because I’m convinced this recipe is THAT good.
I do most of the grocery shopping in our family, but just about every Friday evening, my husband will take a trip to wally-world by himself. He goes to pick up certain items for himself and quite often will find some good deals on organic veggies to bring home.

Every once and a while though, our communication of what we need and don’t need gets messed up. I will get an overabundance of organic carrots, avocados, or like this past weekend, zucchini. I had already purchased a few at our local market and then he brought some home too.
This isn’t necessarily a bad thing though. It just means that I have to get a little more creative in the kitchen, and when that happens, recipes like this Zucchini Meatballs come together.
Zucchinis are just finishing up their season, so they have been on sale at just about every store. I use them in a TON of different recipes. If you type Zucchini in the search button you’ll see zucchini bread waffles, mock crab cakes, zucchini pickles, and of course a delicious zucchini bread recipe, just to name a few.

All of which are delicious and tasty recipes, but I’m tellin ya’, these Zucchini Meatballs are off the hook delicious. And they are super easy to make too!

Don’t be afraid to try them. I promise… they are packed with flavor and will have you wanting to make a second batch in no time!

I’m not including a recipe for the tomato sauce with this because honestly, I don’t have a homemade sauce that is my favorite.

For this recipe, I chose to use a bottle of a favorite Maryland pizza place of ours. Ledo’s Pizza makes the most amazing pizza and the secret, I think is their sauce. Thankfully, one of my best friends lives in MD and will bring me a few bottles when she comes to visit.
So, for this recipe, use whatever sauce is your favorite. It’s all up to you!
Either way, I hope these Zucchini Meatballs become a family favorite in your home as they are now in mine.
