Crazy, I know, but you have to understand. Cheesecake and I go way back. We were like a family. It was my go-to dessert to make for any party. All different kinds, but my favorite is peanut butter cheesecake. So to find out that I wouldn't be able to eat them anymore, well, that was just heartbreaking.

When you first start making things with cashews you may get a little sticker shock. Cashews can be expensive. Especially if you like getting them organic like I do. But I found out that if you can find them in bulk, whether organic or not, you can save a lot of money.

I've tried a couple different brands of cashews, but always seem to go back to Food to Live's organic cashews. They seem to have the freshest taste and make a really creamy mixture.

Peanut Butter Cheesecake Bites
INGREDIENTS
Crust
- 2 cups of chocolate rice cereal
- 3 tablespoons coconut oil
Filling
- 1 1/2 cup raw cashews, soaked in water
- 2 tablespoon lemon juice
- 1 teaspoon pure vanilla
- 1/2 cup peanut butter
- 1/3 cup maple syrup (more to taste)
- 1/2 cup full fat coconut milk
- 1 banana
- 3 tablespoons milk
INSTRUCTIONS
- In a large food processor, combine chocolate rice cereal and coconut oil. Pulse until the mixture starts to come together.
- Using a non-stick mini muffin pan or silicone mini muffin pan, spoon crust mixture in, 1 teaspoon at a time. Press down to form a base crust.
- Place mini muffin pan in the freezer while you prepare the filling.
- In a high-speed blender, combine all your filling ingredients. Blend until creamy.
- Retrieve mini crusts from freezer and spoon filling mixture in. Filling to the top.
- Place cheesecake bites back into the freezer for at least 2 hours.
- Remove carefully from mini muffin pan and place in a freezer container until ready to serve.
