When the fall season comes into view, I not only get excited for cooler weather and the beautiful colors, but I also love all the new vegetables that come into play. Tons of delicious recipes start to swirl in my head and I can't wait to get into the kitchen. Dishes like this gluten-free pasta with roasted Butternut squash are what makes fall one of my favorite times of the year.
Fall Veggie Experiments
Squashes have become one of my favorite vegetables to experiment with.
They each have their own distinct flavor profile, and when cooked correctly, can make a very simple dish explode with flavor.
The Sweetness of Butternut
When putting together this recipe, I knew that I wanted to start out with Butternut squash. It's one of my favorites because it has a really wonderful sweetness that makes it stand out. This sweetness is interesting though. It's not a sugary sweet and it works well with other less sweeter ingredients like mushrooms and spinach.
Gluten-Free Pasta with Roasted Butternut Squash
Butternut Squash is a fun, versatile vegetable that is not only easy to cook with, but doesn't require a lot of extra ingredients to make the recipe delicious.
Finding the Right Gluten-Free Pasta
My family and I have been eating gluten-free for quiet a few years now and we have noticed that although finding gluten-free products has gotten easier, finding ones that actually taste good can be difficult.
That's why trying new products can be looked at as a fun food adventure. You never know how it's gonna turn out.
I Walked Right Past Them How Many Times?
I recently had the opportunity to work with Barilla and to come up with a new recipe using one of their Gluten-Free pasta's.
After doing a little research and finding out that Barilla pastas are made with non-GMO corn and rice products, (which is a big deal to me), I was excited to try them out.
I found them right at my local Publix store, which made me wonder why I had never tried these before. It's crazy to think that sometimes the yummiest ingredients are right in front of you.
Yes! Yes! And Yes!
Let just first say this.. YES!! The Barilla Gluten=Free Penne pasta that I used for this recipe worked perfectly!
No Penne stuck together (which has happened to me before) and the pasta held together perfectly.
When combined with the rest of the ingredients, these Gluten-Free Penne made the dish complete!
Let The Veggies Do The Flavoring - No Sauce Needed
Roasting veggies is something I LOVE to do. It brings out such a fantastic flavor to the vegetables.
For this dish, I decided to keep it simple. I roasted my Butternut squash with Portobello mushrooms and sliced red onions. I drizzled some avocado oil on top and added some salt and pepper to the mix.
With a few minutes in the oven, these roasted veggies were ready to be tossed with the pasta and sauteed spinach and onions.
In no time flat, I had a delicious, gluten-free meal that didn't even need a sauce to make it fabulous!
Now It's Your Turn
The simplicity of this meal is what makes it great! It looks like it took you hours to prepare, yet it only takes a few minutes! You've got to love that!
