If I could make a few gallons of this dairy free ice cream at a time I would.
Well.. I probably wouldn't. Cuz you know.. If I made that much.. I'd eat that much.
Something as delicious as this ice cream is better in small batches. Made only a few times a year. That way you don't get tired of it (not sure I would though) or get bored with the recipe.
OK. Maybe they aren't a "Wonder Nut", but they are pretty darn awesome.
Before going dairy-free I could count on one hand the times I ate cashews. The only time I did eat them was when they were at a party in one of those mixed nuts things. They were good, but not something that I really enjoyed snacking on.
That was until they became one of my favorite ingredients.
Some really smart recipe developers have found that you can use cashews as a replacement for a lot of dairy items.
Processed with some nutritional yeast and spices and you have dairy-free Parmesan. Soak in water and blend with garlic powder, lemon juice and a few other ingredients and you have a dairy-free sour cream.
Soak in water, add some vanilla, maple syrup, and other ingredients and you have homemade Ice Cream!
The first time I tasted cashew ice cream I couldn't believe how amazing it tasted. It was at a vegan restaurant and my mind was blown.
Yes, it was a different taste, but that's OK. It was creamy, it was sweet, and it allowed me to enjoy ice cream again.
It was at that time I knew I had to figure out how to make it at home.
Thanks to Rodelle I had some delicious Madagascar Vanilla in my cupboard. Add that to some well soaked cashews and a few other ingredients and I was ready to make some homemade ice cream.
Not only was this going to be the first time that I was making dairy-free Vanilla ice cream, but it was the first time I had ever worked with true vanilla beans.
I was truly nervous. For some reason I had built it up in my head to be something very difficult. I had watched Martha Stewart do it, but though for sure I would mess it up.
Yet, I knew if I didn't try... I wouldn't be able to make a great tasting dairy-free ice cream. So I took a deep breath, grabbed a good knife and slowly extracted the vanilla out of the beans.
I didn't mess it up! Woo hoo! I was able to get just the right amount of pure vanilla and quickly added it to the mixture.
Investing in an ice cream maker was something I had to think about. I wasn't sure if I really wanted to spend the money and was a little worried if it would just end up collecting dust somewhere in the cabinets.
Though, I have to say, once I learned that I could make dairy-free ice cream, and that it was actually pretty easy, I was glad that I had bought it.
By mixing up just a few ingredients and then adding them to the ice cream machine I am able to have a delicious treat that's healthy and allergy friendly. I also get to pick what flavors and addition I want. How great is that?
I really hope you get a chance to try this recipe. If you can't have dairy and have never tried to make ice cream at home, this recipe is going to really surprise you.
I added some dairy-free chocolate chips, but with this basic Vanilla base ice cream recipe, you can add just about anything you'd like. Crushed cookies, chopped up peanut butter cups.. you choose.. it will taste great.
