8 Ingredient Bruschetta Salad Dressing

Spring is here and that means lots of new and fresh veggies will be hitting the stores. A perfect time to experiment with new recipes and creations. And I’ve got the perfect, spring-fresh dressing for you to try. This Bruschetta Dressing is made of only 8 ingredients and will become your go-to dressing for Spring and Summer - if not into the Fall and Winter too.

More Than Just A Dressing

I call this recipe a dressing because, well, that’s it’s main job, but this recipe can be used for so much more.

From being used as a delicious spread on a wrap to a flavorful topping on some toasted, crusty Italian bread, this Bruschetta recipe is not only tasty but very versatile.

Getting Saucy With Omega 3’s

As part of a Barlean’s Blogger Challenge, I was asked to come up with something ‘Saucy’ using their Organic Flax Oil.

Now I already use this Flax Oil on a daily basis in my smoothies, so I had a good idea of the taste and flavor profile, but to be honest, I had never thought about using it as a substitute in any of my dressing recipes.

 

I’m not sure why I had never thought of this before, but I’m sure glad they challenged me to do this because it worked perfectly in this recipe!

8 Ingredient Bruschetta Salad Dressing

8 Ingredient Bruschetta Dressing. Perfect for a salad, a sandwich wrap, or a topping for toasted bread. Gluten-free Dairy-free

Ingredients

  • 1 cup avocado oil (or your favorite oil of choice for dressings)
  • 1/2 cup Barlean’s Flax Oil
  • 1/2 cup Basalmic Vinegar
  • 1/2 cup sun-dried tomatoes, finely chopped
  • 1/4 cup red onion, finely chopped
  • 2 minced garlic cloves
  • 2 tsp dried basil ( or 2 fresh basil leaves chopped)
  • 1/2 teaspoon pink Himalayan salt

Instructions

  1. In a large, wide-mouthed mason jar (or large bowl) combine all the ingredients in the order listed.
  2. Using an immersion blender, blend on high for a few minutes until well blended.
  3. Cover and refrigerate for up to 2 weeks.
  4. Shake well before using

Notes

You can also combine all the ingredients into a blender and mix it that way. Storing in an air-tight container or jar.

Omega-3 fatty acids are really important to an overall healthy lifestyle. They have many powerful health benefits for your body and brain. So much so, that omega-3’s are one of the most thoroughly studied nutrients in the health industry.
