Delicious Baked Sweet Potato Chips

Have you ever been at the grocery store and saw something on sale that wasn't on your list, but bought a bunch of it anyways? That's what I did when I saw a great deal on organic sweet potatoes the other day. I bought over 4 pounds of them. I love cooking with sweet potatoes. From a using them in a vegan cheese to these delicious baked sweet potato chips, I knew I wouldn't have a problem putting them to good use.

My Love For All Things Sweet Potatoes

Looking back over my childhood years I can honestly say that the only time I ate sweet potatoes was during Thanksgiving and Christmas. It was that one dish that had them covered in some kind of syrup and tiny marshmallows.. yuck.

Little did I know, there was so much more to this root vegetable.

It wasn't until I became an adult, had kids of my own, and really started experimenting in my kitchen that my love for all things sweet potato really took effect.

Now I can't get enough of them. Thus why I bought a ton of them at the store.

Shredded for a nice hash or even used as a meat replacement in BBQ, sweet potatoes are my jam. You can eat them for breakfast, lunch, or dinner, so how could you not love them, right?

Creating Something New

Once I got home, with all my sweet potatoes, it hit me that I now needed to come up with something to do with all these things. It had to be something new, something different though. Not because anyone demanded it... I just wanted it to be that way.

So I put on my thinking cap and fixed myself some lunch, hoping that I would come up with something.

That's when it hit me... as I was placing a few gluten-free grain chips on my plate.. the inspiration hit... make Baked Sweet Potato Chips!

It was perfect! I had never made baked sweet potato chips before and I had the perfect salt/spices! Vitacost had just sent me a nice gift pack of some really cool gourmet sea salts from Gustus Vitae and I knew they would be perfect.

Here's some info about the salts from Gustus Vitae:

Our naturally infused gourmet salts are veritable armoury for your kitchen: small sprinkles of our sea salts impart big flavor and elevate simple dishes to signature plates. Our varied collection of gourmet salts lend profound depth of flavor-and often a wonderful color when used as finishing salts and sprinkled on foods just prior to serving. A touch of our decadent Truffle Sea Salt on roast potatoes will transform them into a gastronomic masterwork, and dusting our Natural Smoked Sea Salt on baked veggies or chicken will impart a richly smoked BBQ flavor without all the mess. Simple favorites benefit too: a little Red Cayenne Sea Salt spinkled over a fresh green salad adds wonderful color contrast and a tantalizing heat, and a pinch of our Paprika Sea Salt on fresh burrata or warm pasta lends an extra savory depth and a beautiful juxtaposition of colors.

Sweet Potato Chips with a Kick!

I loved playing around with the three different salts I had. Each has it's one distinct flavor which made the baked sweet potato chips taste amazing.

When making the recipe, I split the sliced potatoes I had into three different groups so I could try them all at once. Once baked, they each carried their own really distinct flavor. No overpowering kick of spiciness or saltiness, just an all around amazing taste.
