I love my morning cup of coffee. It has something to do with that first smell of beans brewed to perfection that gets me going. Coffee is my spirit animal, so when I came up with the idea to make this dairy-free chocolate espresso ice cream, I crossed my fingers and toes hoping that it would taste amazing. And guess what... it does!

Making a dairy-free ice cream can be a little nerve wracking if you have never done it before. Reading directions like 'soak cashew nuts' can seem a bit strange, but when you taste the end product, it all makes sense.

Now I have made a few ice cream recipes, but this time around I got a little daring. I really wanted to have a rich, coffee flavor for this ice cream, so I decided to soak my cashews in some freshly brewed espresso.

I personally don't drink espresso on a regular basis, so I decided to stop by my favorite coffee shop and purchase some of the coffee beans they use for their espresso. I told them what I was making, and although they thought it was a little strange I was going to soak cashews in the coffee, they were quite intrigued as to how it was going to turn out.

Making homemade ice cream is a pretty easy process. With just a few ingredients and a simple ice cream maker, you can have a delicious tasty treat to enjoy.

This recipe consists of basically six ingredients. Cashews, filtered water, espresso powder, maple syrup, pure vanilla extract, and cocoa powder. Blend all these together and voila.. an amazing, dairy-free bowl of goodness.
