I'm just going to start off this post with this..

These Portobello 'Steak n' Cheese' Sandwiches are AMAZING!

I know, I know.. I've said that before about a few other recipes, but seriously.. these are crazy delicious.

After just one bite, you may just be saying .... "Steak?? What's Steak?"

Mushrooms?.. Why'd It Have To be Mushrooms?


To further prove my point on how AMAZING these sandwiches are, let me tell you something about myself.

I used to hate really dislike mushrooms.

On my childhood YUCK scale, mushrooms were just one step above liver and onions.

They could have been tied, but my grandmother had a way of making liver somewhat tolerable, but you get the point... I really didn't like them.

A few years back though, when I first started eating a more plant-based diet, someone told me that I had to try Portobello mushrooms. They said that, if marinated and cooked right, they could actually take place of a burger and or a steak.

To say that I was skeptical was an understatement. How in the world could a gross, weird, fungi taste like a steak?

Yet, I accepted the challenge to just try it.

I bought my first pack of Portobello mushrooms, made a nice marinade, let them soak for a few hours, and then grilled them up.

OHHHH MYYYY GOODNESS!

They were so good. Did they taste like a hamburger? NO. But they did have an amazing flavor.. and I've been hooked ever since.

My conversion to liking mushrooms was not only a surprise to me, but also a surprise to my husband.

Poor thing, he had been there on many occasions to see me turn my nose up at mushroom pizza or choose just eating salad so I didn't have to eat the chicken Marsala. He knew I didn't like mushrooms.

So, needless to say, when I started bringing mushrooms into our home to actually cook with, my fungi loving man was very happy.

But Enough About My Issues.. You Need To Try This


OK. I'll stop rambling on about my mushroom conversion. Now, I'll just concentrate on telling you about this recipe.

It's AMAZING!

What Makes It So Good?


Marinating the mushrooms for as long as possible and using liquid smoke are my to secrets, so to speak, for this recipes awesomeness.

The smokiness of the liquid smoke, alongside the other ingredients are what gives the Portobello mushrooms their 'meaty' flavor.

When I made these the other night I realized I was out of Balsamic vinegar, which I usually use, so I substituted with Red Wine Vinegar. I was a little worried if it would change up the taste, but was really pleased with the new kick it gave the marinade.

When it comes to the dry ingredients, feel free to add or take away with spices that you enjoy. I've tried just salt and pepper before and that was pretty good, but I love the addition of the garlic and onion powder.
