Easy Peasy Nacho Cheesy - Dairy Free Nacho Cheese

I love dipping..

Give me a handfull of fresh, organic tortilla chips and a bowl of black bean and corn salsa..and I'm a happy gal.

There's something about that salty and spicy thing that can pretty much make my day. Yet, even though I love my salsa, sometimes it just isn't enough.

Sometimes I just want some gooey, melted nacho cheese... but I can't have it!

Life Without Cheese

I'm going to be perfectly honest with you right now... when I finally figured out that dairy was causing a lot of my health issues, I thought I would never be able to enjoy food again.

I thought I would have to give up things like pizza, grilled cheese, and dippin' my chips in some hot, delicious nacho cheese.

I soon realized though, that there is life after cows milk...

All it took was a little bit of research, an adventurous spirit to try some new things, and the determination to want to be healthy.

Non-Dairy Substitutes

A lot of times when someone is told they can't have a certain kind of food, they will rely on some kind of processed food as a substitute.

Now, I'm not saying that they don't come in handy... I do love me some Follow Your Heart Cheddar Cheese Slices, but the stubborn, ornery side of me tends to want to make it myself. Give me the internet and a few cookbooks and I'll be figuring some kind of recipe in no time.

You Can Make Cheese With That?

When it comes to making different kinds of cheese type recipes, there are a few ingredients (some you would never think of) that make amazing substitutes for dairy/cheese. Ingredients like

  • cashews

  • nutritional yeast

  • potatoes

  • carrots

I know.. I know.. you're thinking potatoes?? carrots?? How can that be?

Believe it or not though, each of these ingredients.. mixed in with a few others, can make living a cheese-free life, totally doable.

My latest creation was inspired by some recipes I saw for Vegan Nacho Cheese on Pinterest. Although there are quite a few on there, I decided to pull from a few different ones and create one that I thought would work for me.

Going Beyond The Nuts

A lot of cheesy and or creamy type recipes you will find out on the web will have cashews as their base.

I've used them quite a bit and love them in things like lasagna and on top of pizza. Yet for this recipe I wanted to try something a little different.

Cashews tend to have a little bit of a sweeter taste to them, so using the potatoes and carrots in this one lends to being able to add some spicier ingredients.

So Simple To Make

Now when I say this recipe is simple to make, I'm not joking.

I literally used a pot for boiling the potatoes and carrots together and then once cooled, put all the rest of the ingredients into my Nutri Ninja blender.

Veggie Nacho's Here I Come

The same night I made this Nacho Cheese for the first time, I had also planned on making veggie nachos.

I chopped up some zucchini, yellow squash, green and orange peppers, and some red onions. Sauteed them all up in a skillet with some homemade taco seasoning and cooked up some lentils for added protein.

In no time flat, my plate was packed with not only tasty veggies, but it was also covered in some incredible, gooey, cheesy nacho cheese!
