During this time of year, I start to struggle coming up with dinner recipe ideas. My husband works outside all day, so he prefers that dinners be light and refreshing. This sounds easy, yet when the summer tends to drag on.. I start running on empty with what I can make.

That's why I was thrilled to come up with this Delicious Cold Asian Pasta Salad. It's packed with a lot of great flavors and is a perfect cool dish for a hot summer day.

Started Out Hot Than Became Cold


When I started out to make this dinner it was actually going to be just a regular stir-fry type meal. Brown rice, sauteed veggies, and so on. Yet, when I started to gather up the ingredients and had to go outside to the extra fridge in the garage, I realized how hot it was.  Feeling the heat, I knew I needed to change up my plans.

I was a little nervous because I had never made a cold Asian salad before, but I wasn't going to let that stop me.

Bring On The Veggies


This dish was going to pack a lot of delicious ingredients with a ton of flavor.

With a mixture of fresh and frozen, I gathered up all the veggies I could and started creating.

I quickly boiled the broccoli, peas, and peppers all together to bring out the flavors and allow them to have a nice crunch to them. With a quick drain and rinse under cold water to stop the cooking process, these veggies were ready to go.

The Pasta Foundation


You can't have pasta salad without pasta, so for this dish I decided to use some gluten-free brown rice Fettuccine noodles that I had in the pantry.

I knew these noodles would do a great job soaking up the flavors of the sauce and would hold together well with vegetables.

Don't Forget The Carrots


I wanted to add some color to the dish, so I grabbed a few carrots.  Washed and shredded, these carrots pack a lot of great flavor, and don't even have to be cooked to add into a dish like this one. The added crunch makes the dish even that much better.

Onto The Sauce


When it comes to Asian sauces, my favorite flavors can be counted on one hand. Tamari Sauce, garlic, rice vinegar, toasted sesame oil, and Sweet Chili sauce. Put these flavors together and WOW.. you have got one delicious sauce that goes with just about anything.

I've often used these flavors in my regular stir-fry, so I was excited to see if I could put them together for a cold pasta dish.

With a few whirls around with the whisk and an additional dash of salt or too, I had a created the perfect addition to this dish.

Mix It All Together and Voila


For a dish that I was nervous about making, this thing turned out pretty darn awesome.

When you have all the ingredients ready to go, you literally put them all together in one bowl, pour the sauce over it, and toss to coat. That simple. That delicious!
