Gluten-Free~Dairy-Free Zucchini Bread

I remember, back when I was little, thinking that zucchini's were some kind of crazy vegetable.

My grandparents grew them in their garden all summer long and my grandmother would come up with the most amazing recipes using using them in all sorts of different ways. Some that would even surprise me.

Yet, one of my favorites was her zucchini bread. Moist, sweet, and oh so delicious. And since there was always plenty of zucchini to be had, she would make a few loaves at a time because one was never enough.

Zucchini Bread brings back such fond memories for me, so I myself, love making it for my family.

I am always amazed how the strangest of ingredients can come together to make the most delicious of treats. I mean who would have ever thought that if you shredded up a zucchini and added in some sugar and other miscellaneous ingredients that you would create a tasty treat that just about anyone would like.

Making An Old Recipe New


These days though I'm having to get creative with some of the older recipes I grew up with. Between allergies and wanting healthier options, making a good ole favorite recipe becomes a little bit of an adventure.

Gluten-free flours, sugar substitutes, and even egg replacers have become staple ingredients in my kitchen over the years. It has definitely taken some getting used to, but now I really enjoy creating something new from something old.

Flax Meal and Honey.. Who Knew


Whenever I venture into a new/old recipe there is always a small case of nervousness that sets in.

Using flax eggs instead of regular eggs and honey instead of sugar can be a bit risky. Depending on the other partnering ingredients, you just never know how it will turn out.

Flax eggs are actually really easy to make and make a great substitute for eggs in just about any baking dish. By just adding 1 Tablespoon of flax meal to 2 to 2 1/2 Tablespoons of water and letting it rest for 5 minutes, you have a nice eggy type replacer.

Thankfully, for this recipe, all the different ingredients work extremely well together. Dare I say.. it may even taste better then the one I grew up with?
