Every Monday evening I have a group of ladies gather in my home. We having been meeting together, for just about every Monday night, for quiet a few years now. We laugh, we study God's word, and we enjoy a good snack or two.

I often have to apologize or explain my concoctions to my friends though. They usually know my recipes are different from your 'normal' recipes, so they are usually quick to ask 'what's in it?' before taking a bite. I don't blame them though, I tend to use them as my foodie guinea pigs every now and then, but I don't think they seem to mind because they keep coming back.



This past week I decided I wanted to try out a new Blondie recipe. I had received some Butter Flavored Coconut Oil from Barlean's and I wanted to try it out. I had had some chocolate cravings early in the day, so Blondie's came to mind. They are easy to make and are a one dish dessert recipe which I like.

Yes, Butter Flavored Coconut Oil Can Taste Amazing


I came upon Barlean's Butter Flavored Coconut Oil about a year or so ago. Before I even started working with them as a blog ambassador, I was already a huge fan.

That didn't happen right away though. I'll be honest, when I first heard about 'Butter Flavored Coconut Oil' I was more then a little leery. The name 'flavored' always gets my healthy antennae's up, but as I did a little research I was pleasantly surprised to find out that not only was it organic, but that the flavoring was from botanicals. Nothing harmful to my body at all.

Getting That Buttery Flavor Without The Dairy


Baking without dairy can be a little tricky sometimes. Finding a substitute that won't take away from the flavor of what you're cooking is hard. Barlean's Butter Flavored Coconut Oil though takes away that issue. It has become my go to butter substitute in baking and is always the topper to the many popcorn bowls we have going in my home.

Playing Around With Other Substitutes


With this Blondie recipe, I decided I wanted to try and find a different kind of sugar substitute. I usually use organic sugar, so I don't think about it too much, but this time I wanted to try something new.

Pureed Dates


I have used dates in other recipes as a sweetner, so I figured there had to be a way to try them in this recipe too. After a little digging on the internet, I found that if you take 1 cup of pitted dates and add 1/2 cup of hot water to them, it will make a great paste.

Putting It All Together


With all my favorite ingredients in hand, I set out to put together a delicious, chocoaltey Blondie recipe.

  2. These looks so good, and guilt-free! I love Barlean's buttery coconut oil. It's a huge difference from regular coconut oil, and lets me ditch the chemical-ridden dairy free butter when I just want buttered toast.

  7. These look great! Can you explain to me the reason for Xanthum or guar gum? I know they are commonly found in gluten free goodies but say I tried this with just Almond flour would it be necessary? I bake with Almond flour a lot and it doesn't seem to need the gum. Also I might try just adding butter extract instead of the flavored oil. I love that stuff! I know it's not the most natural ingredient but it makes a world of difference when trying to make healthy things taste like cake or cookies! :)

  14. Hi Ashley. You know, I have just gotten in the habit of using the gums in all my baking. I'm not usually a great baker, so anything that helps stabilize it makes me more comfortable. LOL. But I"m sure you could try it without and see how it works. They have a nice thick texture so you may not need it. I have never used the butter extract before.
