I don't know how long the whole "What I Ate" blog theme thing has been going on, but I'm just now trying it out.
As far as I can tell, it's a great place where foodies like me can share about what delicious things they have recently eaten. It's also a fun way to see what other bloggers are eating, find new recipes, and or great new restaurants to try.
It's mainly a food diary so to speak, of what people have eaten throughout their week. Yet, for me, I'm going to do things a little different. I'm going to share with you a "What I Ate in Utah" for the next couple Wednesdays.

Planning Out Our Eating Spots
A few days ago, I shared about How to Eat Healthy While Traveling. In that post I talked about how I like to research and find cool, healthy places to eat while on a road trip. Yes, I pack essential foods and snacks, but I also love to find unique, local eateries to try. For me, finding delicious food makes a good vacation great.
Recently, my husband and I took a trip out to Utah to visit some of the beautiful National Parks out there. While planning this trip, I of course, looked for interesting and healthy places to stop and eat along the way. With the help of Instagram and Google, I had quite a list. First stop, Orem, Utah.
Lunch at Aubergine & Company in Orem Utah
I found Aubergine & Company first by Googling 'vegan places to eat Utah'. Aubergine & Co. isn't a completely vegan place to eat, but they do have some fantastic options. I scrolled through their menu and new almost immediately that I wanted to stop here. So many great options. Dairy-free, Gluten-Free, and most of all.. lots and lots of plant-based choices.
I really enjoyed reading the story behind Aubergine & Company. Their passion and values for the service and food they provide is pretty awesome.
After spending an hour or so in one of their locations, I sensed their values are working pretty well for them. The employees were extremely friendly, the food delicious, and the general atmosphere of the place as inviting and fun.
Of course we have to talk about the food. The set-up of Aubergine and Company is really cool. You decided what you would like from their menu and they walk you through the whole construction of your food.
From Specialty sandwiches and salads to build your own, Aubergine covers just about every taste bud. I chose the Baked Falafel Salad and my husband chose the Zucchini Chopped.
Watching Chloe put together our salads was a lot of fun. Mine was kind of 'build your own' so she walked me through all my options. My husbands was a chopped salad, which means they put all the greens together and 'chop' them up, then mix all the remaining ingredients in a bowl.
The portion sizes are HUGE. One salad will definitely sustain you for a complete meal. The ingredients are fresh and locally bought as much as possible. They do use organic ingredients when available.
Summing Up Our Visit
We were STUFFED. Happy and Stuffed. We had a few hours to drive to our next destination, so it was nice to know we were fueled up and ready to go.
As you can probably tell, we really enjoyed our visit to Aubergine. We had actually planned to stop there again on our way back out of Salt Lake, but a flat-tire kind of messed up our plans.
If you are ever in the Salt Lake City area, I would definitely check out one of their locations. I'm pretty sure you will really enjoy it and not go out of there hungry.

As I said earlier, the crew at Aubergine's was great. I told them that I would be blogging about my food travels and they were more then happy to help out. Chloe was awesome and walked us through every step.
